Classic Chicken Salad
We are going to learn on how to make a chicken salad in three different ways the first one is going to be a classic chicken salad the second is a mayo-free Italian chicken salad and the third is buffalo style chicken salad. All of these three recipes are great for lunches perfect to add to your meal prep on the weekend and could not be any easier to make. For all these recipes we are going to use a cup of chicken. Ideally, you can roast your own bone-in skin-on chicken breasts or you can use some store-bought rotisserie chicken as well whichever works for you.
First up we have a classic chicken salad and the classic are a classic Ferraris and they are so simple and so good. So into a nice big bowl get your chopped up chicken breast and to that add finely diced celery, finely diced red onion and a nice thick pinch of salt a little bit of black pepper and avocado-based mayo give that all a stir get it really well combined. Most mayo bought at the grocery store is made up of highly processed seed oils and these are the type of oils that can cause inflammation in the body.
You can skip the mayo altogether and do some Greek yoghurt here or you can go 50 50 half yoghurt and half mayo. Then transfer to a bowl and there you have it. The classic chicken salad that is just so simple so delicious you could serve these on a Sammy you could serve it with some crackers put a scoop on top of your favourite salad or just put it on a little lettuce cup. The flavours in this recipe are to die for. Next, get your chopped chicken breast pieces into a bowl and add in your chopped up roasted peppers, capers which are really bright and briny and finely diced red onions, finely diced cucumbers and then some toasted almond slices a little unexpected but crazy good in this salad and finish up with one clove of crushed garlic, extra virgin olive oil, red wine vinegar and some salt pepper.
Stir it together until all of those flavours and textures combined. And again feel free to serve this however you would like all of these salads are flexible. Last is the buffalo style chicken-style so in a nice bowl add in your chopped up chicken and to that add finely diced carrots and finely diced celery and then blue cheese dressing then finish it with a tablespoon of your favourite buffalo sauce and salt, pepper.
If you like spicy, a couple of dashes of cayenne pepper and stir all together and you will have a chicken salad version of buffalo wings crunchy spicy creamy and absolutely delicious. These recipes can be made ahead of the time and can last up to 5 days in the fridge in an airtight container.
Classic chicken salad Ingredients;
- 1 heaping cup baked chicken breast, skin removed and chopped
- 1/4 cup finely diced celery
- 2 tablespoon finely diced red onion
- 2 tablespoons mayonnaise
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Combine all ingredients into a medium bowl and gently stir until well combined. Serve and enjoy.
Italian Chiken Salad Recipe (Mayo Free)
- 1 heaping cup baked chicken breast, skin removed and chopped
- 1/4 cup jarred roasted peppers, chopped
- 2 tablespoons capers
- 2 tablespoons finely diced red onion
- 2 tablespoons diced cucumbers
- 2 tablespoon toasted sliced almonds
- 1 clove crushed clove garlic
- 1 tablespoon extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Combine all ingredients into a medium bowl and gently stir until well combined. Serve and enjoy.
