Fried Potatoes and Chicken Wings
There are many ways to prepare chicken wings, they can be braised, fried, grilled or baked. Today we don’t fry or stew, in this recipe, we fry the chicken wings and potatoes. The chicken wings are marinated until they are tender then paired with the potatoes in a frying pan or a wok. Start by washing the chicken wings then pat them dry with a kitchen towel, after that, cut them into two from the middle and place them in a mixing bowl.
Add scallions, garlic slices, light soy sauce, cooking wine, pepper, a little salt, sugar and cumin powder into the chicken wings, mix them well and marinate for at least half an hour to two hours. Meanwhile, peel the potatoes and cut them into small finger-thick strips or wedges then wash them with clean water.
Pour an appropriate amount of cooking oil into the pot and heat it, put the potato sticks in and fry on low heat. It is best to dry the surface of the potato strips with kitchen paper to prevent the oil from being splashed. After the potato strips are cooked, add an appropriate amount of salt to taste and set aside.
Add the marinated chicken wings to the oil that remained in the pot after removing the potatoes and fry them repeatedly over low heat until the chicken wings are lightly burnt, about 10-15 minutes.
Add the potato strips back into the pot, mix and stir fry evenly on low heat for about 5 minutes. You just want it to heat up well before serving, if you cook it longer the potatoes will become soggy. Finally, sprinkle white sesame seeds, cumin grains and green onion, turn off the heat and serve.

- 350 grams of potatoes
