Sweet Airy Croissants Recipe

Place the dough in a greased bowl, cover with plastic wrap, and let it rest in a warm place for about 1-2 hours or until it doubles in size. While the dough is rising, place the chilled butter slices between two sheets of parchment paper. Use a rolling pin to flatten and shape the butter into a rectangle, roughly 6×8 inches. Keep it chilled in the refrigerator. Once the dough has doubled, punch it down and roll it out on a lightly floured surface into a 10×20-inch rectangle.
Place the prepared butter layer in the centre of the dough. Fold the dough over the butter, like folding a letter, to encase the butter completely.
