The best-grilled cheese always starts with a sturdy bread, lots of cheese. It should be crispy and toasted on the outside and gooey with cheese in the middle. It should hold together with integrity whether you’re nibbling at the corners or dunking it into tomato soup. Start by preheating your cast iron skillet that you will use. Preheat it on medium to medium-low heat and nothing on high.

One thing about grilled cheese is that it doesn’t matter how fast you want to make it, you just have to give it time for that golden brown exterior. If you rush this process it will burn. Start by buttering one side of your slice of bread and if you are using something with a rounded top just make sure you butter the correct side.

Make sure you butter your bread all the way to the edges then place it right on your preheated cast iron skillet then add your cheese on the bread then place another slice on the bread. Do not be in a hurry to achieve that golden brown exterior so make sure you take time to achieve it. If you get impatient and turn the heat up then you will probably burn it before the cheese gets to melt.

Once your grilled cheese sandwich is exactly how you want it to be then you can remove it and let it cool in a plate.

Ingredients;

  • 2 slices bread
  • 1 tablespoon butter
  • Generous 1/4 cup grated cheese, like cheddar or any other melting cheese

Instructions;

  1. Place the skillet over medium heat and add the butter. Let the butter melt completely.
  2. When the butter begins to sizzle, that means your pan is hot enough for the sandwich. Spread the butter around the middle of the pan with the spatula.
  3. Rub the bread in the melted butter. Remove one of the slices and keep it close by.
  4. Pile the cheese on the bread: Pile the grated cheese in an even layer over the entire surface of the bread.
  5. It’s ok to go right up to the edge.
  6. Cover the pan with a lid. Let the cheese melt until it’s almost entirely melted, but you can still see some distinct cheese pieces, 2 to 3 minutes.
  7. Uncover the pan and top the sandwich with the other piece of bread.
  8. Squish slightly so the top adheres to the melted cheese. Flip the sandwich over.
  9. Let the sandwich cook on the other side until toasted golden brown, another 1 to 2 minutes.
  10. If the first side wasn’t as toasty as you like, flip the sandwich again and toast until golden brown.
  11. Transfer the sandwich to a plate, cut in half, and eat immediately.
