This beautiful chicken stir fry recipe is so simple to make and tastes absolutely lovely. For this recipe, you will need boneless chicken cut into strips or cubed. Place them in a bowl and season with garlic powder, black pepper, smoked paprika, onion powder, chicken season, salt and corn flour. Mix the chicken and the added spices thoroughly then cover it and let it marinate for about 30 minutes.

You can do it longer. Into a medium-sized bowl, prepare a slurry by combing dark soy sauce, light soy sauce, oyster sauce, tomato ketchup, cooking wine, sweet chilli sauce, sesame oil and cornflour. Whisk to mix the ingredients to one then set it aside. Prepare the vegetables by cubing or cutting into stripes of green and red bell pers, you can also add the yellow bell peppers if you prefer.

Into a pan on medium heat, add vegetable oil and let it lightly heat up then add the marinated chiken and fry the chicken until it is fully cooked or golden brown. Do not fry the chicken on high heat, medium heat will ensure the chicken is fully cooked on the inside without burning on the outside. As long as your pan is non-stick, you should be fine with about 2 to 3 tablespoons of oil.

After about 6 to 7 minutes, your chicken should be well done. Transfer them into a bowl then place teh pan back on the heat and add minced ginger and garlic. Fry them for about 3 minutes then add chopped onions and fry them for 2 minutes. Add chilli and bell peppers then turn the heat to high and fry them for about 2 to 3 minutes then add the slurry.

Mix it thoroughly and leave it to cook for about 2 to 3 minutes. Add the cooked chicken and spring onions and combine then leave it to cook for a minute. For other vegetables, you can use broccoli, green beans or carrots in this chicken, so feel free to add more vegetables. After simmering for a minute, serve hot with rice. Enjoy…

  • 1/3 Cup Sweet Chilli Sauce
