These honey muffins come together really quickly with ingredients that you have on hand and the best thing is that you can use any type of honey you like. Start by getting the muffin pan and put a paper liner in each one of the wells and take the baking spray and spray on top of the muffin so that in case the muffins puff up and start bake onto the muffin pan it will release evenly. The best thing about making muffins is that you can make it all in one bowl you do not have to get a mixer out and that is the way it is with these honey muffins.
Start by getting the flour measured out into a bowl (stir flour with a knife to just lighten it up because when the flour sits in a can or bag it starts to settle and compress and you do not want that). Next to the flour add sugar, baking powder to give them lifts to the muffins and salt, mix the dry ingredients together, you want the sugar to get through the flour as well as the salt and baking powder.
Next, get milk and to that add an egg, the reason to break the egg in the milk is to help you so you do not stir so much when you put the liquid ingredients into the flour mixture and hence you will get a nice tender muffin. Pour the milk mixture into the flour mixture and then to that add your melted butter that you have let cool and then honey clover oil honey or any to your preference.
Mix everything up using a spatula and be careful not to overmix the batter, you just want to make sure that the dry ingredients are moistened. So make sure you drag your spatula at the bottom because that is where the flour hides. Next, get your large ice cream scoop up and you want to fill them halfway so that you make sure you get enough batter in each well and they are evenly divided.
Preheat your oven to 400 degrees Fahrenheit and bake the honey muffins for about 15 minutes. When they come out of the oven test them with a toothpick to make sure they are cooked through. Grab your toothpick stick at the centre and it should come out clear and these should sit in the pan for another 5 minutes. Place the muffins on a plate and drizzle more honey over them and serve.

- 2 cups (240 grams) flour
- 1/2 cup (100 grams) sugar
- 3 tbsp baking powder
- 1/4 tbsp salt
- 1 egg
- 1 cup (240ml) milk
- 4 tbsp (19grams) butter, melted and cooled slightly
- 1/4 cup honey
Instructions;
- Preheat an oven to 400˚F. Line a 12 cup muffin pan with paper liners and spritz with baking spray. Set aside.
- In a mixing bowl, stir together the flour, sugar, baking powder, and salt. Mix milk and egg in a measuring cup or other small bowl and add to the flour. Then add the butter and honey.
- Mix, just until all the dry ingredients are moistened.
- Divide the batter into the 12 muffin wells, filling them about 3/4 full with batter.
- Bake for 15 minutes, then test with a toothpick for doneness. Let the muffins sit in the pan for 5 minutes, then with a fork, remove them to a cooling rack.
