Everybody loves fried chicken and this recipe will take your fried chicken appetite to the next level. To make the extra crispy spicy fried chicken, you will fry the chicken twice, one by poaching it first then by frying it. Boil about a litre of water and while the water is heating up. Add in quartered onions, bay leaves, red chillies, garlic, cinnamon sticks, cloves, juice in one lemon, a good amount of salt and coriander seeds.

Place the chicken drumsticks with skin on in the boiling water and let it cook for about 15 minutes. Once the chiken is poached, remove from the water and let it cool. Heat the frying oil while preparing the chiken. To coat the chiken, have two large bowls, the first bowl with all-purpose flour and the second bowl with one cup of instant oats.

To season both of the coatings, add a teaspoon of salt for the all-purpose flour and the instant oast, add a teaspoon of back pepper powder for both and then add a quarter teaspoon of red pepper chilli in the instant oats bowl. Whisk the seasoning in the bowls then whisks three eggs in a different bowl.

Dip the chicken nicely into the flour and that will make the chiken nice and dry, shake off all the excess then dunk it into the beaten egg and coat with the instant oats. Continue the same process for the rest of the pieces of the chicken. Once all teh chicken pieces are well coated, begin to fry teh chiken until golden brown. Let the chiken cool down before eating.

  • 3 Onions
  • 2 Bay Leaves
  • 2 Dried Red Chillies
  • 3 Garlic Cloves
  • 2-3 Cinnamon Sticks
  • 5 Cloves
  • 1 Lemon Juice
  • 2 1/2 tsp Salt
  • 10-12 Black Pepper Corns
  • 1/2 tsp Coriander Seeds
  • 5 Chicken Drumsticks

For Coating of the Chicken;

  • 1 cup All-Purpose Flour
  • 1 cup Instant Oats
  • 1 tsp Salt
  • 1/2 tsp Black Pepper Powder
  • 1/4 tsp Red Chilli Powder
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Cumin Seed Powder
  • 3 Eggs

Instructions;

  1. Let’s start with heating up the water in the wok then add onions, bay leaves, dried red chillies, garlic cloves, cinnamon sticks, cloves, lemon juice, salt, black peppercorns, coriander seeds then drop the chicken pieces one by one.
  2. Let chicken pieces cook in the boiling water for 14 minutes, after 14 minutes take the chicken Pieces out and rest all of them on the plate.
  3. Start with coating the chicken for which dip the chicken pieces into al purpose flour (with salt, black pepper powder, red chilli powder, garlic powder and cumin seed powder added later into), Eggs and Instant oats (with salt, black pepper powder, red chilli powder, garlic powder and cumin seed powder added later into.
  4. Properly fry the chicken into the oil until golden brown.
