Coca-cola cake is a chocolate cake that is very moist, fudgy and contains coke which is made with frosting and you can top with any nuts you like. This is a great cake to have on hand. Start by preheating the oven to 350 degrees Fahrenheit and you are going to use a 9 by 13-inch baking pan that is buttered and lined with a parchment paper. Melt some butter in a medium-sized pan then add unsweetened cocoa powder and whisk that into the melted butter then add a little oil.
The last ingredient you will add into will be coke and whisk just6 until it comes to a boil and everything is well mixed in. Remove from the heat and set aside to cool just a little. Place all-purpose flour in a bowl than that add granulated white sugar and whisk that together then add baking soda and salt. Whisk that together then make a wee in the center then break two large egg in a small bowl, whisk them then add in vanilla extract and pour in the buttermilk and stir it in.
Pour in the cocoa cola mixture into the well in the dry ingredients and whisk that in carefully until everything is well mixed in then gradually add the buttermilk and egg mixture into the batter. Once the batter is well mixed, pout ]r into the baking pan and everyone’s oven is a little different so you will bake the cake somewhere between 28 and 30 minutes. It’s always best to check a few minutes before the stated baking time just to make sure your cake is not overbaked.
A toothpick inserted at the center should come out clean and the cake should also start to pull away from the sides of the pan. Let the cake cool a bit while making the frosting. To make delicious cheesecake filling which is cold cream cheese and vanilla and you are going to give that a quick mix before adding powdered sugar. Add the sugar then give it a quick mix and you don’t want the cream cheese to warm up, it needs to remain cold for.
Add in the heavy cream and continue mixing until you get beautiful whipped cheesecake frosting. Add a generous layer of cream frosting on the coca-cola cake then set it in the fridge to chill until everything is firmed up. Remove the cake from the fridge and coat the cake with chocolate ganache for the extra chocolate flavor then let it chill again before serving. Slice and enjoy.

- 1 3/4 cups (230 grams) all-purpose flour
- 1 3/4 cups (350 grams) granulated white sugar
- 1 teaspoon (5 grams) baking soda
- 1/2 teaspoon (2 grams) salt
- 2 large eggs, at room temperature (110 grams)
- 1/2 cup (130 grams) buttermilk, at room temperature
- 1 1/2 teaspoons (6 grams) pure vanilla extract
- 1/2 cup (113 grams) unsalted butter, at room temperature
- 1/2 cup (50 grams) unsweetened natural cocoa powder
- 1/2 cup (120 grams) flavorless oil
- 1 cup (250 grams) Coca-Cola
Chocolate Frosting:
- 3 cups (345 grams) confectioners (powdered or icing) sugar, sifted
- 1/2 cup (113 grams) unsalted butter, at room temperature
- 1/4 cup (25 grams) unsweetened cocoa powder
- 1/3 cup (80 grams) Coca-Cola (or milk)
- 1 1/2 teaspoons (6 grams) pure vanilla extract
Instructions;
- Preheat your oven to 350 degrees F (180 degrees C). Butter, or spray with a non-stick vegetable spray, a 9 x 13 inch (23 x 33 cm) pan.
- In a large bowl whisk together the flour, sugar, baking soda, and salt. Make a well in the center of the dry ingredients.
- In another bowl, whisk together the eggs, buttermilk, and vanilla extract.
- In a medium saucepan, placed over medium heat, melt the butter. Then whisk in the cocoa powder, oil, and Coca-Cola.
- Bring just to a boil then remove from heat. Let cool about five minutes then pour into the dry ingredients and whisk until combined.
- Stir, or whisk, the egg mixture into the batter until combined. Pour the batter into the prepared pan and bake for about 28 – 30 minutes or until the top is firm and a toothpick inserted into the center of the cake just comes out clean.
- Remove from oven and place on a wire rack to cool while you make the frosting.
Cheesecake filling;
- Beat cream cheese and vanilla then add powdered sugar. Add the sugar then give it a quick mix and you don’t want the cream cheese to warm up, it needs to remain cold for.
- Add in the heavy cream and continue mixing until you get beautiful whipped cheesecake frosting.
Chocolate Frosting:
- In a medium saucepan, placed over medium heat, melt the butter. Whisk in the cocoa powder and Coca-Cola (or milk) and bring just to a bowl.
- Remove from heat and, whisking constantly, slowly add it to the confectioner’s sugar, along with the vanilla extract, until smooth.
- Spread a generous amount of the cream cheese over the cake then let it chill in the fridge, remove it and pout the warm chocolate frosting over the cake. Let it cool then slice and serve.
