This is a very delicious cheese bread that is soft with a strong scallion flavour. To make the bread dough, add 250 grams of bread flour in a bowl together with 40 grams of sugar, salt, one egg, cold milk and instant yeast then with the hook attachment, mix the ingredients on low speed just until the dough is formed then add unsalted softened butter and continue kneading the dough until on high speed. You can also knead this dough on a work surface, just make sure you knead the dough really well until the dough is soft, elastic but not sticky.
Once the dough is formed, round it then place the dough on a lightly oiled bowl, cover with a plastic wrap and let the dough proof for 1 hour or until it doubles in volume. Once proofed, place the dough on a work surface and divide the dough into 8 portions then roll each small dough into a smooth ball. Once you are done, cover the rolled dough with a plastic wrap and let them sit for 10 minutes.
Take the dough and lightly flatten with your hands to remove any trapped air then roll it into a long oval shape, take some mozzarella cheese and put in the middle then roll it up from one end and wrap the cheese inside. Press the other side with your fingers to make it thinner for sealing the cheese well so they won’t leak when baking.
Roll it gently and pinch the seal then place it on a parchment-lined baking tray. Use a blade to make a light cut on the top of the dough, be careful not to scratch the dough and expose the cheese. Once you have lined all the dough on the baking tray, cover them and let them proof for 60 minutes. Prepare some chopped green onions by chopping them and place them in a bowl and add a teaspoon of oil to prevent the green onions from scorching.
Once the dough has proofed, brush the top with egg wash then top with mozzarella cheese then sprinkle some chopped green onions on top of the cheese. Finally, sprinkle some cheddar cheese powder on top to make the bread cheese taste stronger. Bake these breads in a 370 degrees Fahrenheit(185C) preheated oven for 15 minutes. The bread will bake to a golden brown and be very fragrant. Place it on a cooling rack and let it cool a bit then serve it. This bread is best eaten while it’s warm.
