This easy oven-roasted chicken is golden crispy and juicy that is made with perfection. For the seasoning, using dry thyme, herbs de Provence you can use Mediterranean seasoning if you like, cumin, onion powder, garlic, creole seasoning or any poultry seasoning, paprika, double seasoning, be sure to taste your seasoning out if you need more salt you can add it and black pepper and stir them well with a fork. Use one lemon and squeeze out the juice.
If your chicken is from the freezer, let it come to room temperature then make sure you remove any moisture on the chicken by patting it dry with a paper towel. Pour the oil on the chicken and for the lime juice you are going to pour in the inside of the chicken. One its time to add our seasoning, make sure you generously season this chicken.
You can minimize the seasoning as much as you want, add the seasoning all over the seasoning to make sure the inside under the skin between the thighs it is well covered with seasoning.
Bake the chicken covered with cooking foil at 425F for 42 to 50 minutes. Make sure the last 10 minutes of the cooking process you remove the foil so that you can achieve the nice crispy skin. If you still don’t have the nice golden brown colour on top you can turn on your broil just to turn the colour and make sure you watch closely so it does not burn. once it is done take it out of the oven it should be golden brown in colour and crispy. You can use a knife and fork to dig in.
Ingredients;
- 4 pound (2kg) whole chicken
- 1 tbsp thyme
- 2 tbsp herbs or the Mediterranean even Italian seasoning will work
- 1 tsp cumin
- 2 tbsp onion powder
- 1 1/2 garlic powder
- 2 tbsp creole seasoning or any poultry seasoning
- 1 tbsp paprika
- 1 tbsp adobo seasoning
- 1/4 tsp salt
- 1 tsp ground black pepper

- Bake on 425 degrees for 40 minutes covered on the bottom rack of the of oven
- then bake uncovered for 10 additional minutes till Golden brown.
