Make it today and enjoy it. Put the extra-fine granulated sugar into a mixing bowl. Add unsalted butter to the sugar. Next, get your dry ingredients beginning with unbleached flour into another mixing bowl. To the flour add potato starch, baking powder, and salt. Then whisk the dry ingredients together using a wire whisk and set aside.

Next prepare your wet ingredients by adding half ‘n half, brandy, and pure vanilla extract into a measuring cup. Mix the wet ingredients together. Using a paddle attachment on your electric mixer mix your sugar and butter for about 3 to 5 minutes until everything is mixed well together. Then add in eggs one at a time letting each egg mix for 10 seconds before adding another.

After all the eggs have been added mix for about 2 minutes to mix everything together. Then stop the mixer and scrape the sides and bottom. Set the mixer to the first speed and let it run for a little bit. Add your pouring shield to avoid spilling your ingredients. Add your dry ingredients in portions as the mixer keeps on mixing.

Once all your dry ingredients are added add in your wet ingredients. Then remove the pouring shield. Let it mix for some time and then scrape the sides and bottom to ensure everything is mixed. Line your pans with parchment paper to avoid the cake from sticking. Then pour you batter to your cake pans to ½ way full.

Put the cakes into an oven that has been preheated at 350 degrees F. Bake for about 30 minutes. You will know they are ready when the tops are nice even blond color and the cakes begin to pull away from the sides of the pan. Once done remove from oven and let them cool before you eat.

  • 14 oz. extra-fine granulated sugar (1.75 cups)
  • 1.5 sticks (6 oz) of unsalted butter (170 grams)
  • 7 oz. unbleached all-purpose flour (198 grams)
  • 2 oz. (57 grams) of potato starch
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 1 cup half ‘n half
  • 2 tbsp brandy
  • 1 tbsp pure vanilla extract
  • 4 large eggs (5 eggs at high altitude)
