This is a deliciously super soft extremely, moist, easy to make a cake that contains a refreshing lemon flavor that boosts energy. To make the lemon cake; you will need butter, sugar, plain flour, eggs, baking powder, yogurt, lemon zest, and salt. Begin by adding the butter and sugar into a bowl. Cream the butter and sugar until pale yellow. Add in eggs one egg at a time.
Using a whisk mix the egg into the butter and sugar mixture. Add in the lemon zest (get the zest by grating the outer part of the lemons) and then add in the sifted flour, baking powder and salt then gently blend them together. Use the spatula to mix the ingredients to avoid over mixing the batter. Fold in the flour into the butter.
Add into the batter yogurt and combine everything together to get a uniform mixture. When the batter is ready, transfer the batter on to a baking vessel and bake at 350 F preheated oven for 40-45 minutes. Test the doneness of the Lemon cake by poking the center of the cake with a skewer if it comes out clean, then the Lemon cake is done. Brush the top of the lemon cake with Lemon syrup (optional) while the cake is still warm, this will add more lemon flavor to the lemon cake.
To make the lemon syrup, you will need water, sugar, Juice of half of a lemon. Boil until they get a syrup consistency. Leave the cake to cool down completely before slicing.

- 100 ml thick yogurt

- 220 gms All-purpose flour
- Lemon zest of two lemons.
