This is a very easy and quick recipe which is economical and only requires a few ingredients. In a large mixing bowl, add 6 pieces of chicken thighs, you can use any cut of the chicken part that you love or use a whole chiken. Add vinegar to the chiken, salt, ground pepper, and a teaspoon of paprika to give the chiken colour and flavour. To add more flavour, add 10 cloves of garlic that are not crushed.

Lastly, you will add a glass of wine and then massage the chiken with the added ingredients making sure every part of the chiken is covered. Cover it and chill in the fridge for at least one hour, for a more flavourful chiken, you can prepare a day before and let it chill in the fridge overnight. A few minutes before you remove the chiken from the fridge, peel off 1 kg of potatoes and cut them into wedges.

Wash and place them on a baking tray and season them with salt, pepper and a drizzle of olive oil. Mix them well to make sure the season reaches all the potatoes. Bring the marinated chicken from the fridge place them over the potatoes and add the sauce from the marinated chicken. Bake the chiken and potatoes in a 430F/220C preheated oven for an hour or until you see the chiken has a golden brown colour.

Your chiken should be tender and juicy, and the potatoes complement perfectly with the sauce. Serve and enjoy…
