A carrot cake cookie is a cookie made with ingredients that provide a flavor similar to carrot cake. You will start by melting 1/2 cup of butter then add it to a large bowl, to that, add brown sugar then using an electric beater or a hand whisk, mix the butter and sugar together until well combined then to substitute the eggs, you will add in 3/4 cup yogurt or 3 teaspoon baking soda and 3 tablespoon vinegar, mix them through for about 30 seconds.

Add self-raising flour or plain flour with a butter a teaspoon of baking powder and for some spices, you will need cinnamon and finely grated carrots. You will also add some rolled oats, raisins, and chopped walnuts. If you don’t want walnuts, pecans will be a better substitute. Give that a good mix and get everything combined until you get nice cookie dough.

Roll the cookie dough in balls and flatten slightly o a baking tray lined with parchment paper then bake in a preheated 350 degrees Fahrenheit oven for 15 to 20 minutes. Once out of the oven, let the cookies cool completely before serving them. If you want to make them a little better, serve them with cream cheese frosting and sandwich two cookies together.
