These easy and fantastic Russian buns are made just like the normal buns but with any cream cheese of your choice at the center. Serve them with tea as a snack or for breakfast. In a jar of milk, add sugar and yeast then stir the mixture and set it aside for the yeast to activate. In a large bowl, add milk, oil, 3 eggs, a pinch of salt and 4 to 5 tablespoons of sugar then with a hand whisk, mix the mixture until smooth.

Sift in the flour and start to bring the dough together, halfway into the process your yeast mixture should have bloomed, add the yeast mixture and continue kneading the dough. If you are using a stand mixer, this will take about 7 to 10 minutes, if you are kneading by hand, place the dough into a lightly floured surface and continue kneading the dough with your hands until it is very soft but not sticky.

Lightly grease a clean bowl and place the dough in it, cover with plastic wrap then let the dough proof for 20 minutes. Meanwhile, prepare the cheese by breaking the cheese into small bits with a fork then add a tablespoon of sugar, a pinch of salt, vanilla sugar and one egg then stir everything in until smooth.

After 20 minutes, lightly knead the dough in the bowl then cover it again and let it set for another 30 minutes. Once the dough has risen, transfer it to your work surface and divide it into 6 to 8 pieces. Take each dough and roll it into a ball then place on a greased baking sheet. Use the bottom of a glass to make a hole in the center of each dough, that is where you will place the cottage cheese.

Add the cheese filling into the dough then brush the edge of the dough with egg wash. Bake in 350 degrees Fahrenheit (180C) preheated oven for 20 to 25 minutes. These buns can be eaten warm or cold, the smell is incredible and you are going to love it to the last bite.
