Chocolate Chip Vanilla Cake
This delicious chocolate chip cake is made with a fluffy vanilla cake filled with chocolate chips and covered in a luscious, creamy vanilla buttercream. Start by preheating your oven to 350F then in a mixing bowl add two and a half cups of all-purpose flour, three-quarters of a teaspoon of salt, and two and a quarter teaspoons of baking powder give it a whisk and set it aside. Into a stand mixer, add 170 grams of room-temperature unsalted butter.
If you have salted butter, just reduce the amount of sugar that you added earlier. Cream the butter by beating it until light and fluffy then add one and three-quarters cups of granulated sugar and beat it on high for about 4 minutes until light and fluffy. With the mixer on medium speed, add two teaspoons of vanilla extract and three eggs and continue mixing until everything is incorporated.
Add the dry ingredients in three batches alternating with one cup of buttermilk while mixing on low speed until just almost combined then add the chocolate chips and finish by folding everything in with a spatula. Once done, pour the batter into a prepared bundt or round cake pan and bake in the preheated oven for 45 to 50 minutes.
While the cake is baking, make a vanilla frosting you can add more chocolate chips to it. Add one and a half cups of butter into a mixing bowl and cream the butter just until nice and smooth then sift 5 cups of powdered sugar and add the powdered sugar a cup at a time while mixing it with the butter.
Add a quarter cup of cream or milk and two teaspoons of vanilla, and continue mixing on low speed until nice and creamy. You can stop here or add a cup of chocolate chips and mix them in the frosting just until they are evenly distributed. Once the cake is baked, let it cool down completely then frost the cake. - 1 Tbsp vanilla (15mL)
- 1 cup buttermilk (240mL)
- 1 cup mini chocolate chips or regular sized
For the Frosting:
- 1½ cups unsalted butter at room temperature
- ¼ tsp salt
- 5 cups powdered sugar
- ¼ cup cream or milk plus more as needed
- 2 tsp vanilla (10mL) plus more to taste if desired
- 1 cup mini chocolate chips or regular-sized. Plus more for decorating.
