Regular fried rice is great but what’s even more awesome is burnt fried rice because it has that extra dash of garlic sprinkled right through this dish. Get your wok nice and hot before you start cooking, you will need a good amount of rice, about one cup which is soaked in water then cooked, it is best that you cook the rice a day before because that is when you will get a nice fine separate grain of fried rice. Ler it stay io the refrigerator overnight then remove it when preparing to make this dish.

On the wok, add oil then a good three tablespoon of finely minced garlic, and with the flame on low, cook the garlic while stirring it so that it doesn’t burn very quickly. once nice and crisp, take out about two teaspoons of the fried garlic and set it aside so that you will use it at the end for garnishing. In the remaining garlic, add thinly sliced spring onions, cook it for a few seconds then add finely chopped french beans and toss everything around then add chopped carrots and continue stirring then add black pepper.

Cook it until the veggies are nice and al dente then add two tablespoons of soy sauce and toss that around the pan. With the heat on low, add the rice to the wok but do this in batches making sure the rice is nicely coated with the soy sauce and take the flavor of the burnt garlic. Mix the rice thoroughly until everything is mixed together really well then turn off the heat.

At this point, you should add a dash of salt and mixed in well then a few more things you will need to add to the dish. Add a quarter teaspoon of plain white vinegar to balance all the flavors and a few green onions, mix that through and you are ready to serve your burnt garlic fried rice. Top it with the fried garlic that you had set aside for garnishing. Burnt garlic fried rice is a great way to use leftover rice, try this dish, and enjoy.

  • 2 tbsp Oil
  • 3 tbsp Garlic(minced)
  • 2 Spring Onions White(sliced)
  • 5-6 French Beans(sliced)
  • 1/2 Carrot(chopped)
  • 1/4 tsp Black Pepper Powder
  • 2 tbsp Soy Sauce
  • Salt
  • 1/4 tsp Vinegar
  • Spring Onions(sliced)

Ingredients;

  1. Heat oil in a pan over a low flame, and add minced garlic, sliced white spring onions and mix it
  2. Now add sliced french beans, chopped carrot, black pepper powder, soy sauce and mix it
  3. Add the leftover rice to the pan, and coat it well with soy sauce
  4. Now, turn off the flame; add salt, vinegar, sliced spring onions and mix it
  5. Garnish it with some burnt garlic and serve it
