A carrot cake cookie has ingredients that provide a flavour similar to carrot cake. You will start by melting 1/2 cup of butter and adding it to a large bowl. To that, add brown sugar, then, using an electric beater or a hand whisk, mix the butter and sugar until well combined. To substitute the eggs, add 3/4 cup yoghurt or three teaspoons baking soda and three tablespoons vinegar and mix them for about 30 seconds.

Add self-raising flour or plain flour with butter and a teaspoon of baking powder. For some spices, you will need cinnamon and finely grated carrots. You will also add some rolled oats, raisins, and chopped walnuts. If you don’t want walnuts, pecans will be a better substitute. Give that a good mix and combine everything until you get nice cookie dough.

Roll the cookie dough into balls and flatten slightly on a baking tray lined with parchment paper. Bake in a preheated 350 degrees Fahrenheit oven for 15 to 20 minutes. Once out of the oven, let the cookies cool completely before serving them. To make them better, serve them with cream cheese frosting and combine two cookies.
