These easy, soft and tasty cottage cheese buns are super delicious, fill them with jam and serve them in the morning to your family for breakfast. Make sure all your ingredients are at room temparature then preheat your oven to 350F/180C. Add 180 grams of cottage cheese into a mixing bowl and mash it with a spatula just to make it soft. Add 50 grams of butter, 80 grams of sugar, a teaspoon of vanilla sugar and a pinch of salt to the cottage cheese.

Mix the ingredients until well combined, the mixture will not be homogenous because of the cheese but make sure they are well mixed. After mixing, add one egg and mix it in then set aside. In a separate bowl, sift 2 cups of flour and one teaspoon of baking powder, lightly mix them so the baking powder is well distributed in the flour. Gradually add the sifted flour mixture to the cottage cheese mixture and start kneading the dough with a spatula.

Switch to your hands as the dough becomes hard and knead until soft. Roll the dough into a ball and cut them into 9 buns weighing approximately 68 to 69 grams. Roll each piece into a ball, take each dough, lightly flatten it, and add a teaspoon of jam, berries, or fruits. Pinch the edge of the dough and pull it tight then roll into a ball. Repeat the same process with the remaining buns then line them in a parchment-lined baking tray.

Make sure you spread them well so they have enough space to puff up while baking. Bake the buns in the preheated oven at 180C/350F for 22 minutes until they are slightly browned.
