This cake is super moist and sweet from the raisins. It a perfect holiday cake and your family is going to enjoy this cake to the last bite. You will start by soaking the raisins in rum preferably overnight or up to 5 hours then preheat your oven to 350 degrees Fahrenheit and prepare a baking pan by greasing it then lightly dust it with flour and set it aside.

In the bowl of a stand mixer, add butter and beat it on high speed for about5 minutes until super light and pale then add in granulated sugar and continue beating the mixture for 5 minutes until the butter-sugar mixture is nice and creamy. Into the batter, add 4 eggs one at a time while beating each egg until well combined in the mixture before adding the next. Combine it well then add vanilla extract for flavouring and mix it in.

Add in flour and baking powder in small additions and using a spatula, fold the dry ingredients in. By folding, you are incorporating the air in the batter which will make the cake become spongy if you mix the batter with the stand mixer you are likely to overmix the batter and that will result to a stiff cake. Once all the dry ingredients are moistened, add the soaked raisins into the batter and continue to fold until you get a nice thick batter and you can smell the raisins with the holiday mood.

The batter has to be of dropping consistency, not a flowing one. Pour the batter into the prepared pan then gently level the top of the cake and bake it in the 350 degrees Fahrenheit oven for 35 to 40 minutes. Once the cake is baked, remove it from the oven and invert it on a wire rack to cool completely. Enjoy this cake served with whipped cream or with a cup of tea.

  • 200 gms All-purpose flour
  • 200 gms butter
  • 250 gms sugar powder
  • 1.5 tsp baking powder
  • 4 eggs
  • 1.5 tsp vanilla essence
  • 1/2 cup raisins
  • 1 cup rum

Instructions;

  2. Sieve all-purpose flour with baking powder.
  3. Beat butter and sugar powder till light and fluffy.
  4. Add in the flour and fold it in with a spatula until all the dry ingredients are moistened then add the soaked raisins and mix well.
  5. Pour the batter into the prepared cake pan and bake in a 350 degrees Fahrenheit preheated oven for 35 to 40 minutes.
