Super Soft, Rich Coffee Cake

There is nothing more relaxing than sitting in a comfy chair with a cup of coffee or milk with a slice of coffee cake. This cake is super simple and is made with a simple and creamy coffee frosting. In a small mixing bowl get sour cream and to that add some fairly strong coffee (to get this just mix instant coffee and mix it with hot water and let it cool). Mix the mixture together until smooth using a spoon and set it aside. In a large mixing bowl add in your chopped butter that you have allowed being nice and soft and to it add brown sugar you can use white sugar if you want but brown sugar has got a really nice flavour and it will help make a darker batter. Using an electric mixer beat that up until it is pale and smooth.

Next, add in your eggs one at a time beating it well after each addition. Next, add in half of your self-rising flour if you do not have it you can always use plain flour and it add baking powder. Mix the flour in and add in half of the creamy coffee mixture and mix it in then add in the rest of the flour and mix it in too and the remaining creamy coffee mixture and mix it in using a spatula to get a beautiful rich batter that you can transfer to you cake tin.

Grease your cake tin and line the base and sides with non-stick baking paper and pour in your batter and smooth the top with a spatula and drop the cake a couple of times on the counter to release any air bubbles that might be in it and then it will go to the oven. The oven should be preheated at 180C and the cake should bake for about 45 minutes or cooked all the way through. When it is baked remove it from the oven and let it cool in the pan for about 10 to 15 minutes then transfer it to a wire rack to cool completely.

In the meantime let’s make some coffee frosting for the top of the cake in a bowl get soft cream cheese (Philadelphia-style cream cheese) use the spreadable type because it is easier to work with. Just let it come to room temperature to make it extra soft to that add in your icing sugar which is powdered sugar or confectioner sugar and add in your coffee (mix instant coffee in a little bit of warm water) and beat it together with an electric beater until smooth.

Place it on top of the cooled cake and then you can take the slice and enjoy it. The cake is moist and rich and it is not too sweet and it has got the coffee flavor.

Ingredients;

Cake:

  • 2 Cups (226 grams) of Self Raising Flour
  • 1/2 cup (150g) of Sour Cream
  • 1/3 Cup of Strong Freshly Brewed Coffee
  • 180 (1.5 sticks) grams of Butter
  • 1 cup (200 grams) of Brown Sugar
  • 3 Eggs

Frosting:

  • 250g Philadelphia-Style Cream Cheese (softened)
  • 1/2 Cup of Icing Sugar (aka Powdered Sugar or Confectioners Sugar)
  • 2 Teaspoons of Instant Coffee Powder (dissolved in a little warm water)
