This is a simple chicken curry recipe that anyone can make. The recipe is for beginners or even people who are new to Indian cuisine. Heat oil in a pan, and then add chopped onions, and salt to pull out the moisture and make the onions to be cooked faster. Cook the onions until golden in colour. Then add ginger garlic paste, sauté it, add chopped tomatoes or blended tomatoes, cook it for some time and add curry powder, mix it and cook this in a medium flame. Keep cooking until the oil slightly comes out.

Add the chicken pieces (the chicken pieces have been soaked in brine or the chicken is nice and tender, hence will cook really fast). Sauté it put the lid on and let it cook for some time then add water, again put the lid on and let it simmer for about 10 minutes. After 10 minutes the chicken curry is ready. First, we convert it to a restaurant-style chicken curry.

To do so, take the chicken curry in a pan add cream and mix it to give a nice creamy yellow chicken curry. You can sprinkle some coriander leaves and serve it. When tasted it should have a nice silky taste. Also, you can convert it to Indian fried curries. You take a little less gravy in a pan, add some crushed peppercorn, and chopped coriander, and even if it is a south Indian style kind of fry, add some curry leaves. Sauté it till the gravy dries out.

You can add some green chillies make it a little bit hot and chicken fry or chicken curry masala is ready. If you add a little bit of coarse pepper you can call it chicken pepper fry. When tasted it is spicy and good for the spicy lovers. For the south Indian style: You put chicken curry in a pan add curry leaves, and coconut milk, mix this and cook it for 5 minutes till it becomes a nice thin gravy. You can add water bring it to a boil and adjust the seasoning. You can add a few drops of coconut oil to give a fantastic flavour. Serve with white rice.
