One Bowl, No Eggs Chocolate Cake
This chocolate cake has the fewest ingredients for any chcolate cake, it is simple to make and teh cake comes out perfect every time. In a bowl, add one cup of water, half a cup of oil, vanilla and lemon juice then whisk it to combine. Grease and prepare an 8-inch baking tin which is also lined with a parchment paper. Sift the dry ingredients to the baking pan together with cocoa powder, baking powder and salt.
Next, you will add in sugar to the dry ingredients and give everything a good mix then pour in the wet ingredients to the dry and mix everything well until you do not see any dry mixture in the batter but do not overmix the batter. Once the batter is smooth, bake in a 350 degrees Fahrenheit preheated oven for 30 to 32 minutes.
Once baked, let the cake sit for 5 minutes before inverting it to a wire rack and let teh cake cool completely. To make the chcolate whipped cream, add cream in a bowl and add in sugar and cocoa powder to it and flavour it with vanilla essence. Whip the mixture well with a wire whisk until very soft, this should take about 5 minutes.
Once the cake is completely cooled, slice the cake into two and adds half of teh chcolate cream in the centre of the cake then layer with the other cake. Dollop the rest of the cream onto the cake and spread it then top with fresh fruits and serve.
Ingredients;
Dry Ingredients;
- 1.5 cups All-purpose flour
- 1 cup Sugar
- 1/4 cup Cocoa powder
- 1 tsp Baking soda
- 1/2 tsp Salt
Wet Ingredients;
- 1 cup Water
- 6 tbsp Oil
- 1 tsp Lemon juice
- 1 tsp Vanilla extract
For Chocolate Whipped Cream:
- 1.5 cups Cream
- 1/3 cup Castor Sugar
- 1/4 cup Cocoa powder
- 1 tsp Vanilla extract
- Strawberries and Blueberries for garnish
Instructions;
- Grease your baking tin and line the base with parchment paper. In the same pan sift your dry ingredients. Add sugar and mix everything well.
- Next, add in the wet ingredients. Mix everything until you see no hint of flour. This would take about 30 seconds. Do not overmix.
- Bake in the preheated oven at 180°C for 30-32 mins.
For the Chocolate Whipped cream;
- Add all the ingredients mentioned for whipped cream in a bowl and whip to soft peaks.
To Assemble;
- Divide the cake into two using a serrated knife in a see-saw motion.
- Apply sugar syrup onto it.
- Place half of the whipped cream on top of the base layer. Spread it out. Place a layer of blueberries in the centre.
- Layer the other half of the cake on top. Spread the remaining cream on top. Top it off with the remaining cream and garnish with strawberries and blueberries.
