These made from scratch meatballs are best when served over creamy mashed potatoes for a super satisfying meal on a chilly day. Into a mixing bowl – a lightly beaten egg, 1/2 cup milk, 1/2 cup plain panko bread crumbs, 1/4 cup grated onion, 2 teaspoons minced garlic, 1 teaspoon chili powder, 1/2 teaspoon each of salt and fresh ground black pepper, and 1/4 cup chopped fresh Italian parsley.

Add 1-1/2 pounds lean ground beef and mix well. Voila! A fresh and tasty meatball mixture and you’re ready to roll. Line a rimmed baking sheet with heavy-duty foil and coat it generously with non-stick cooking spray. Roll the meatball mixture into balls and try to make them about the size of golf balls.

Place them on the prepared foil and bake them in a preheated 425-degree oven for about 16 to 18 minutes until nicely browned. Remove the meatballs from the oven and reduce the oven temp to 350 degrees for the next round of baking.
