This is the mosy moist and delicious banana nut bread you will ever have. To begin you will need the following ingredients; medium bananas, unsalted butter or margarine, softened granulated sugar, eggs, vanilla extract, all-purpose flour, baking soda, salt, sour cream, and chopped walnuts. Let the bananas ripen on the counter until speckled and then freeze for 1-2 days and this will turn the starch into delicious sugar and make the sweetest bread you will ever have.

Take out to thaw 4-6 hours before you want to make the bread. Cut off the ends and squeeze banana and juices from peel into a bowl and mash with a fork into a puree, if you want to leave bigger banana chunks into your bread you can as well do that. To make the batter: In a large bowl, cream together butter and granulated sugar using an egg beater and once the butter and sugar are creamed together, add in eggs and vanilla and mix well using your beater and set it aside.

To prepare dry ingredients; in a separate bowl, combine flour, baking soda, and salt using a spoon and mix the dry ingredients together making sure the baking soda is and salt gets incorporated into the flour. Add dry ingredient mixture to wet mixture and mix well using a spatula to make sure all the ingredients are well incorporated and the flour is moistened with no lumps.

Add half a cup of sour cream and this will keep your bread nice and moist and tender if you don’t have sour cream you can use yogurt. Take the three bananas that you pureed and add to the batter them mix them in until they are well combined. Scrape the sides and the bottom to make sure everything is well combined and finally mix in nuts.

Butter a 9 inch by 5-inch loaf pan then pour the batter into a greased loaf pan and bake in a 325 degrees Fahrenheit preheated oven for 60-75 minutes. Put a foil over the top so it does not over brown. Bake until a toothpick or knife inserted into the center comes out clean. Let cool for 10 minutes in the pan and then turn out and remove it from the pan. Slice and serve or store in an airtight container for 5-6 days.

  • 1/2 cup sour cream
  • 1/2 cup chopped English walnuts or nuts of your choice (pecans, black walnuts, almonds, macadamia’s, etc)

Instructions;

  5. Pour batter into a greased 9″ by 5″ loaf pan and bake in a 325 degrees Fahrenheit preheated oven for 60-75 minutes or until a toothpick or knife inserted into the center comes out clean.
  6. Let cool for 10 minutes in the pan and then turn out. Slice and serve or store in an airtight container for 5-6 days. Makes 1 loaf. Enjoy
