Butter Milk Pastry Bread
This butter pastry bread is the best bread you will ever eat. It is made with a different method similar to making a croissant and the condensed milk and butter in the dough bring a different flavor to this bread. In the bowl of a stand mixer or a large mixing bowl, add milk, sugar, salt and condensed milk.
Bread with condensed milk has more flavor and tastes better. Add the yeast, bread flour and one beaten egg then with the hook attachment, combine everything together to form the dough. Add 20 grams of butter in the dough and knead it in until the butter is incorporated in the dough and you have a smooth dough. Roll the dough into a ball and cover the dough in a plastic wrap and put it in the refrigerator for 30 minutes.
Meanwhile, flatten 120 grams of butter into about 3mm thick and place it in the fridge for a while. Once the dough is chilled, bring it out of the fridge and roll it into a rectangle dough then place the chilled butter in the middle and fold the dough pieces over from both sides and wrap the butter.
Turn over the dough and press it with a rolling pin but do not press it hard to break the butter. Fold the dough in half then in half and place it on a cutting board and cover with a plastic wrap then freeze it again for 20 minutes. Take the dough out of the fridge and roll it into a large dough sheet then cut it into 4 segments with the same width.
Take two cut strips, cross and fold them together and place them in a 6-inch round baking tin that is well greased. Fold the remaining two dough and place them in another pan and let the dough chill in the pan s for about 2 hours. Place the pans over a baking tray and put hot water in the lower part of the oven and put the baking pan on top then bake the bread in a 340 degrees Fahrenheit oven (170C) for 22 minutes then increase the temperature to 400 F (200C) and bake for an additional 5 minutes.
Once out of the oven, brush the bread with melted butter while still hot then invert the bread on a wire rack to cool completely. The surface of the bread should be golden and crisp and the inside soft and multilayered.
