8 inch Sponge Cake

This is a simple basic cake made with simple ingredients. This cake can be sliced then made into any type of the layer cake that you want the topped with fruits. Add butter in a saucepan over low heat and let it melt slowly. Yoiu will need two 6 inch baking pans, lightly butter the inside of the pans then line the bottom with a parchment paper and set that aside.

Once the butter is fully melted, take it out of heat then add the caster sugar and mix it in until well incorporated. Once butter and sugar are well combined, you will add in the eggs, at this point, make sure the mixture is not too hot because the eggs will be cooked. Once the eggs have mixed nicely, add vanilla extract, the best part about this recipe is you can flavour it however you want, you can add some lemon zest in, orange zest or cocoa powder.

You will need the flour, add the flour to the butter mixture and fold it in until you get a beautiful texture with no lumps. Divide the batter between the two pans then bakes in a preheated 350 degrees Fahrenheit oven for 40 to 45 minutes. You can tell your cakes are nicely baked when they are nicely evenly golden brown and when you touch them, they sprinkle back and you can feel that they are firm in the inside.

Let the cake cool in the pans for about ten minutes then invert them on a wire rack to cool completely. You can do whatever you want with this cake, east then as they are or slice and layer with any frosting of your choice. Enjoy.

  • 250g unsalted butter
  • 250g caster sugar
  • 200g (4) eggs
  • 250g self-raising flour
  • 1 tsp vanilla extract

Instructions;

  1. For a chocolate cake, replace 25g of flour with cocoa powder
