This super easy and delicious three ingredients sponge cake can be decorated with whipped cream and strawberries and it’s really yummy. Start by separating the egg whites from the yolks then whip the egg whites with a mixer from low speed then gradually move to high speed, once its light and fluffy, add three tablespoons of granulated sugar and continue to beat that for another 5 minutes until it becomes glossy and reaches a stiff peak, set that aside.
In the bowl with the egg yolks, beat the egg yolks just to break them up a little bit then add 3 tablespoons of granulated sugar and continue beating it until it is a pale yellow colour. In the egg yolk mixture, sift in three tablespoons of cake flour and whip it in until it’s just combined. Add in the meringue one third at a time and fold it in gently, if you vigorously mix it, the air in the meringue will be lost and the cake will not be light as it should be.
Add the next third of the meringue and fold it in and the last addition, the batter should be nice and smooth. Line a cake pan with parchment paper and pour in the batter and bake in a preheated 320 degrees Fahrenheit for 20 to 25 minutes or until a toothpick inserted at the centre comes out clean.
Once the cake is baked, place it on a cooling rack to completely cool then remove from the pan. If you are frosting the cake, cut the cake into layers and frost with your favourite cream and chocolate.
