This is a very moist and simple vanilla cake that you can use for baking. Start by applying a thin layer of butter all around the baking pan and line the bottom with parchment paper. Add granulated sugar to soften butter and oil in the bowl of a stand mixer or a large mixing bowl.

Whip well until the mixture is soft and fluffy. Into a separate bowl, mix the dry ingredients starting with cake flour, baking powder and baking soda then set aside. Add 3 eggs and beat well in another bowl, then add oil, milk, heavy cream, vinegar and vanilla extract. Mix them until combined.

Add about half of the flour mixture to the butter mixture and mix until almost combined then add half of the wet mixture. Mix slowly and gradually speed up until combined. Add the rest of the flour and mix it incorporated then add the rest of the wet mixture and mix it in until everything is evenly incorporated.

Pour the batter into the prepared cake pan and bake in a 350F/180C preheated oven for 45 to 50 minutes. When the cake is baked enough the top should bounce back very gently and a toothpick inserted in the centre should come out clean. Flip the cake onto a wire rack and if frosting let them cool completely before glazing them.

  • 4 oz | 113 g unsalted butter
  • 113 ml (1/2 US cup) Oil  Add half (Oil 2 oz | 56 g) to butter and add the other half (Oil 2 oz | 56 g) to liquids.
