This is a sponge cake for all kinds of cakes. Super easy to prepare and bake, comes out soft and delicious. Grease your baking pan then line the bottom with parchment paper and set it aside. In a small bowl, add 25 ml of milk and 18 grams of unsalted butter then microwave it just until the butter has melted.

In a mixing bowl, add two eggs and one egg yolk, 5 ml of honey to moisturize and add aroma and 65 grams of sugar. Whisk the ingredients until they are incorporated. Place the bowl with the ingredients over a pot of hot water and continue whisking until the mixture heats to about 40 degrees Celsius.

Remove from the hot water bath and start beating the mixture on high speed for about 8 minutes until it triples in volume and turns pale yellow. Finish off by beating it on low speed for 3 minutes, this will make the batter more stable and shiny. Add 70 grams of sifted cake flour then fold with a spatula until the flour is moistened and there are no lumps.

Bring the melted butter and milk mixture and add a small portion of the batter and mix it then pour it back into the bowl with the batter. Mxi again with a spatula until smooth and incorporated. Pour the batter into the prepared cake pan and tap it a few times on the counter to release any trapped air in the batter. Bake in a preheated oven at 300 degrees Fahrenheit for 30 to 35 minutes. Once baked, remove from the oven and place on a wire rack to cool down completely for about 10 minutes. Slice the cake and serve.

  • Honey 5ml
  • Sugar 65g/ 2.3Oz
  • Cake flour 70g/ 2.5Oz
  • Unsalted butter 18g/ 0.6Oz
  • Milk 25ml

Instructions;

  1. Sift the flour and heat the butter, and milk in the water bath to 60°C
  2. Eggs, egg yolks, honey, and sugar, heat in a water bath to 40°C
  3. After beating, sift in the flour and stir about 30 times
  4. Add a small portion of the butter to the batter and then pour it in, stirring about 30 times
  5. 150°C 30-35 minutes
