Baking can be crazy easy when you just need three ingredients. This sponge cake requires only three ingredients, it’s super simple you only need eggs, sugar and flour. You will start by adding 5 eggs into a mixing bowl and sugar then place it in the mixer with then whisk on and you will start it slowly and then increase the speed as you go.

You want to mix until they are well combined and runny, this should take about 4 to 5 minutes on high. Set the stand mixer aside and add the flour into the sugar and egg mixture in three additions. Make sure you sift your flour as you add it in as this will help get rid of flour clumps in your cake. Folding the batter in is the key to keeping a super fluffy cake, you want to go in a circular motion until the flour is combined with the batter.

Do this three times while adding the flour and mix just until the flour is moistened and the batter is airy and fluffy with no lumps. A pan that is super useful for this cake is the springform pan because once it’s baked you just pop it open and the cake comes out. You will line a parchment paper on the bottom of the springform pan then pour your batter into the pan and lightly shake the pan to level the cake.

Pop it in a 350F (180C) preheated oven for 30 minutes. The cake is done when a toothpick inserted in the cake comes out clean. Once your cake is all done baking, remove it from the pan and place it on a cooling rack. At this point, you can get creative and make it into a layer cake or simply dust with powdered sugar, top with cream and serve. Enjoy…
