This is the moistest orange cake you will bake. You don’t need a mixer for this quick and easy recipe that comes together in just a few minutes In a mixing bowl, add 90 grams of brow sugar then grate the skin of three oranges and add into the sugar. Mix the orange zest with the sugar well until combined then let it sit for about 30 minutes. This will bring out the orange flavour even more.

Sift 185 grams of all-purpose flour 7 grams of baking powder and 1 gram of salt. Whisk the flour with the orange sugar zest mixture then set aside. In another clean bowl, add 2 eggs and lightly beat them then add 55 ml of vegetable oil or melted butter, 45 ml of plain yoghurt/milk, 1 tsp vanilla extract and 90 ml of orange juice.

Lightly mix them to combine then add the wet and dry ingredients. Mix with a whisk until well combined and there are no lumps in the batter. Do not overmix the batter, mix just until the dry ingredients are moistened. Prepare the baking pan by lining it with parchment paper then pour in the batter in the prepared pan and bake in a 190C preheated oven for 40 to 45 minutes.

Check if the toothpick inserted in the centre comes out clean or with a few crumbs. Allow the cake to cool once baked and out of the oven. You can serve this cake plain or make orange icing. To make the icing, add 50 grams of powdered sugar in a mixing bowl and 1 tbsp of orange juice and mix until you achieve a thick consistency. Pour the icing over the completely cooled cake and serve.
