Fluffy Butter Sponge Cake
A super simple sponge cake made with syrup and only requires four ingredients. Start by separating 3 egg whites from the yolks then in a bowl, add three eggs yolks, starch syrup, and vanilla extract, you can replace vanilla extract with starch syrup honey. Whisk those ingredients to make sure the eggs in well beaten and the ingredients are well mixed.
In a small saucepan, place 20 grams of butter and 20 ml of milk and microwave them for 40 to 50 seconds or until the butter is melted, set that aside. In a mixing bowl, add three egg whites that you separated at the beginning and start beating the whites on high speed then gradually add 80 grams of sugar and continue beating on high speed for 5 minutes until the egg whites reach a stiff peak.
Pour the egg yolk mixture into the whites and slowly mix it in the meringue for 30 seconds or until you get a homogenous mixture. Sift cake flour into the batter and using a spatula, fold the flour in slowly until the flour is moistened and you get a smooth batter. Pour the melted butter mixture into the batter and fold it in but do not overmix the batter.
Butter a round cake pan and line it with parchment paper then pour in the batter and tap the pan a few times on the counter to remove any air bubbles trapped in the batter. Bake the cake in 320 degrees Fahrenheit preheated oven for 30 to 35 minutes.
As soon as the cake is out of the oven, tap the pan a few times on the counter again and invert the cake onto a wire rack to cool completely. Slice the cake and enjoy with cream or plain dusted with powdered sugar.

How to make a perfect meringue
- Use cold egg whites.
- When making meringues with egg whites, the dishes and utensils must be clean and dry.
- Egg whites and egg yolks must be completely separated.
