With a burst of citrusy flavour and a light, buttery texture, these biscuits are ideal for any time of the day. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.

Add the lemon zest and mix until evenly distributed. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. The butter should be well incorporated, but small pieces should remain for a flaky texture. In a separate small bowl, whisk together the egg, fresh lemon juice, and vanilla extract.

Pour the wet ingredients into the dry ingredients. Stir until the dough comes together. Be careful not to overmix, as this can result in tough biscuits. The dough should be slightly sticky but manageable. Turn out the dough on a lightly floured surface and gently knead it a few times to bring it together. Roll or pat the dough to a ½-inch thickness. Re-roll the scraps as needed to make more biscuits. Bake in the preheated oven for 12-15 minutes, or until the edges of the biscuits are lightly golden. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. You can drizzle a simple lemon glaze over the cooled biscuits for extra sweetness.

  • ½ cup (115 g/ 8 Tbsp) unsalted butter, cold and cubed
