These are nothing but cookies made using custard powder, you can buy any of your favorite custard powder to make these cookies. To make these cookies take room temperature butter and put into a bowl and using a wooden spoon cream it. (The butter should be room temperature to make it easier for us to cream it.)
To the butter, add icing sugar or even powdered sugar then mix this to a nice creamy texture. Next, take all-purpose flour and to it add custard powder and start to mix it, there is a lot of corn starch in making this custard powder and there is also nice flavor in the custard powder. Add the flour mixture to the creamed butter and sugar then mix it well to get the batter well and nicely creamed with the sugar.
You are then going to add the egg but first, you need to beat the egg until it is nice and frothy. Mix in the egg using a wooden spoon till it becomes a nice creamy texture consistency till it is soft. Do not knead the dough for any cookie dough you should not knead the dough.
When you stretch the dough, it will just break off it won’t stretch and that is how the dough should be. Roll the cookies dough then use a round cookie cutter or shape them in any shape that you want and place them in a baking tray lined with parchment paper.
Bake the cookies at 180 degrees Celcius for around 15 minutes. Once baked, these cookies should have a deep golden yellow color they just melt in your mouth. These cookies can be served the way they are of sandwiches with any type of jam or spreading that you like.
- Butter 250 g
- Sugar powder (or) icing sugar 155 g
- All-purpose flour 250 g
- Custard powder 155 g
- One Egg
- Take a bowl to add butter, sugar powder, cream it and add egg mix it well.
- In this add the all-purpose flour mixture (all-purpose flour and custard powder)mix it well like soft dough and make them into round balls and coat with the icing sugar, transfer into a baking tray, take a fork and press it on the top of the roundels.
- Bake them at a preheated 350 degrees Fahrenheit (180 degrees C) for 15 minutes.
