This recipe cuts down all the steps used to make a cake. To begin prepare cake pans with parchment paper grease the bottom of the pan and line it with the parchment paper. Grease the parchment paper and the wall. Sift all-purpose flour, cocoa powder, baking powder, baking soda, and sea salt into a big bowl. To the mixture add granulated white sugar and brown sugar.

Using a whisk, whisk everything until combined. Next in separate bowls mix the egg yolk and slowly drizzle in oil to make it nice. When it starts to get thick add vanilla extract then continue adding your oil until it has been added. Add eggs and whisk it all together. Then pour the mixture directly into your dry mixture and fold it together. Heat whole milk in a saucepan until it begins to simmer but do not boil.

Put off the heat, whisk it directly into the crumbly mixture, and keep whisking until everything is nicely incorporated and smooth. Pour the mixture into the prepared cake pans then bake in a preheated oven of 350 degrees Fahrenheit for 30 to 35 minutes or until the toothpick comes out clean. Pull the cake out and let it cool on a wire rack for 10 minutes. Unmould your cake pan.

Carefully invert and place on a rack till completely cool. Do not frost it when they are warm. Cool them upside down so that they can stay flat for easier shaping. For the frosting; mix powdered sugar, cocoa powder, and sea salt in a bowl using a whisk. Using an electric stand mixture beat softened unsalted butter till nice and creamy and beat in your powdered sugar mixture. Add in batches until combined and thin it out with whole milk.

When done it should be thick but easily spreadable. Place the cake on a cutting board add frosting at the centre spread it out evenly add next top on top of that smutch it down make sure it stays glued there and spread the rest of the frosting on the top and all the sides and edges. Sprinkle some freshly grated nice dark chocolate on top.

Let it sit for a couple of hours or overnight. Leave it at room temperature by covering the top and leaving it in a cold area. Or just put it in the fridge.

Frosting;

  • 4 cups (500g) powdered sugar
  • 1/2 cup (55g) cocoa powder
  • Generous pinch of sea salt
  • 1/2 cup (110g) softened butter
  • Milk to thin (1/4 cup-1/2 cup)
