This recipe will show you how to make chicken pizzas in two ways, first is using the stove method and the oven method. To make the pizza dough add all-purpose flour into a large mixing bowl followed by instant yeast, sugar and salt. Give it a good stir to combine then make a well in the centre then add an egg and combine then add the warm milk and combine until the dough starts to come together then you will add softened butter. Go in with your hands and mix until you get a smooth dough.

You can also do this in a stand mixer which will be much easier. When made by hand, you will knead the dough on the counter for about 12 minutes, making the dough has to be done right until you achieve the right consistency for the dough. The dough should spring back up when pressed with a finger. Pace the dough in a greased bowl and cover with a damp cloth then let it rise for about 45 minutes or until it doubles in size.

To make the pizza toppings, cut the vegetables in tiny chunks and add some oil to a pan and heat on medium heat then add the onions and saute for a few minutes then add the carrots and celery then sautee for another minute before adding green and red bell peppers and tomatoes. Season with thyme, curry powder and salt then stir to combine. Add one cup of water and cover the pot then let it simmer for 5 minutes. Transfer the vegetables to a blender and blend until completely pureed. place the sauce in a bowl and set it aside. For the protein, you will need chicken breasts, sausage and bacon pieces.

You can use whatever protein you have available. Season the chicken with salt and pepper then transfer it to a pan on high heat the pan sear on one side for about three minutes or until golden brown then flip on the other side and pan sear for another three minutes. Pan sear the sausages and the bacon as well then cut the seared chicken, sausages and bacon into small pieces then set aside. Grate the cheese and set it aside. For the vegetable toppings, cut green and red bell peppers into strips and set aside.

To assemble the pizza, bring the chilled dough to your work surface and cut into 4 equal parts then work with one at a time. For the pizza stove method, take one of the dough and roll with a rolling pin then place a pan on low heat and generously coat it with oil and let the pan heat up the place the rolled dough in the pan. Allow cooking on the pan for 4 minutes or until lightly browned then flip to teh other side and start placing the toppings.

Spread the sauce then the cheese, chicken sausage and bacon pieces and then teh bell peppers. Cover the pan and allow it to cook for another 3 to 5 minutes on low heat, the heat has to be at the lowest. Place the pizza on a pan and serve. For the oven method, roll out another dough and lay it on a pizza tray then coat the top with pizza sauce followed by the shredded cheese, chicken sausage and bacon pieces, some more pizza sauce and more cheese.

Place in a preheated 350 degrees Fahrenheit oven and bake for 15 to 20 minutes or until the cheese is melted and the dough is slightly browned. Take the pizza out of the oven and cut in slices. Both methods will come out perfect every time,

Pizza Dough:

  • 4 cups (480 grams) all-purpose flour

Pizza Sauce:

  • 1 onion bulb
  • 1 red bell pepper
  • 1 green bell pepper
  • 3 carrots
  • 2 scotch bonnet peppers
  • 3 tomatoes
  • 1/4 teaspoon thyme
  • 1/2 teaspoon curry powder
  • 1 seasoning cube
  • Salt to taste
  • 1 cooking spoon vegetable oil
  • 1 cup of water

Pizza Toppings:

  • 2 Chicken breasts
  • 4 sausage pieces
  • 3 bacon slices
  • 1 green bell pepper
  • 1 red bell pepper
  • 2-3 cups grated mozzarella cheese
