Cake with Cheddar Slices

Super delicious sponge cake made with slices of cheddar cheese at the centre. This cake is easy to prepare and bake and if you are a fan of both sponge cake and cheese, this is for you. Start by separating 5 egg whites from the yolks and set the egg whites aside. Into the 5 egg yolks, add one egg and whisk just to break the yolks.

Add 80 ml of milk into the beaten egg yolks together with 70 ml of oil, and 1 tbsp vanilla extract and mix until fully combined. Add sifted cake flour and an eighth tbsp of salt into the mixture and mix well until you have a smooth batter. Set it aside. Bring the egg whites into a big bowl, beat with an electric whisk on high speed until foamy then add 90 grams of granulated sugar in three batches while beating on high speed after each addition.

Continue beating until the meringue reaches a stiff peak. Take a quarter of the meringue and mix with the cake batter and mix until well combined. Pour the batter into the bowl with the remaining meringue and mix gently with a spatula until well incorporated. Prepare 8 8-inch or 20-cm square cake pan by greasing and lining the bottom and sides with parchment paper.

Pour half of the batter into the prepared cake tin and add 4 thick slices of cheddar cheese then pour the reaming batter to cover the cheese. Place the baking tin inside a large baking pan with hot water to about 2 cm high. Bake in a preheated 300F / 150C oven for 90 minutes. Once the cake is out of the oven, remove it from the pan and let it cool. Once cooled, slice the cake and serve. Enjoy.

  • 5 egg yolks
  • 5 egg white
  • 1 whole egg
  • Milk, 80ml (5 tbsp + 1 tsp)
  • Vegetable oil, 70 ml (5 tbsp)
  • 1 tsp vanilla extract
  • Cake flour or low protein flour, 80g/ 2.8Oz (⅔ cup)
  • ⅛ tsp table salt
  • Granulated sugar 90g/3.17Oz (½ cup)
  • 4 thick cheddar cheese slices

1 cup = 240 ml
1 tbsp = 15 ml
1 tsp = 5 ml
