These buns are delicious, they bake nicely golden-brown puff up with an amazing apple filling. You can fill them with anything of your choice and they will still be amazing. They are made with butter which gives them a tender texture that is easy to tear. You will start with making the butter dough, add yeast to lukewarm milk, stir it really well then set it aside. In a mixing bowl add 3 eggs together with sugar then whisk them to break the eggs and to make sure the sugar is dissolved in the eggs really well.

Pour in the bloomed milk yeast mixture and whisk it well. Add sifted flour and mix everything using a spatula and when the dough starts to come together, get your hands in and start kneading the dough. You can do this in a stand mixer which should take about 3 to 5 minutes. If making this dough by hand, continue kneading then start adding softened butter in small additions while you continue to knead the dough. Knead on a lightly floured surface for about 15 minutes until the dough is smooth.

Lightly grease a clean bowl then place the dough in the greased bowl, cover it with a plastic wrap and let the dough proof in a warm place for about 60 minutes or until the dough doubled in size. For the filling, peel and chop the apples into bitesize pieces then place them in a frying pan with melted butter over medium heat. Add the sugar and cinnamon the stir as they fry until soft. Remove from the heat and let them cool down.

Once the dough has proofed, degas it then divides the dough into 3 parts. Roll them into a bowl and let them proof for 15 minutes then take one dough at a time and knead it on a lightly floured surface then divide the rolled dough into equal pieces depending on the size you want your rolls to be. Take a tablespoon of the apple filling and place on the cut dough then fill them tightly and place them on a parchment-lined baking tray.

Cover them with a plastic wrap and let them proof for 40 minutes then brush then with egg wash and bake the buns in a 392 degrees Fahrenheit (200C) preheated oven for 17 minutes. Your rolls will bake beautifully golden brown, once baked, remove from the oven and let them cool down slightly then serve with a cup of tea or milk.

Ingredients;

Butter dough:

  • 450 grams (15.9Oz) flour
  • 100 ml. water + milk
  • 6 grams of salt
  • 75 grams (2.6Oz) of sugar
  • 27 grams (0.95Oz) pressed yeast or 9 gr. dry
  • 3 eggs
  • 45 grams (1.6Oz)  butter, soft

Apple filling;

  • 7 apples or 900 gr. (31.7Oz)
  • 60 – 80 gr. (2.8Oz) sugar or to taste
  • 1 tbsp. l. butter
  • cinnamon (vanilla, zest)

Egg wash;

  • 1 egg + 1 tbsp. l. milk for greasing buns

Bake in a preheated 392 Fahrenheit oven for 17 minutes. The baking time and temperature will depend on the particular oven.
