With just a few simple ingredients and a short prep time, you’ll enjoy a silky, rich cream that bursts with fresh lemon flavour. In a medium saucepan, pour in 400 ml (13.5 fl oz) of milk and add the zest of 1 lemon and 1 teaspoon of vanilla sugar. Place the saucepan over medium heat, and cook the mixture until it begins to boil.

The combination of milk, lemon zest, and vanilla sugar will release an enticing aroma that sets the base for our no-bake lemon dessert. While the milk is heating, take a mixing bowl and combine 2 egg yolks with 40 g (1.4 oz) of sugar. Whisk these ingredients together until they become pale and fluffy. This will ensure that the dessert has a smooth, rich texture.

Once the milk starts boiling, slowly pour a small amount of the hot milk into the egg mixture, whisking continuously to temper the eggs and prevent curdling. Gradually add the rest of the milk while whisking until fully combined.  Add 15 g (0.5 oz) of cornstarch into the mixture, whisking constantly to prevent any lumps. Pour everything back into the saucepan and return it to medium heat.

Cook the mixture, stirring constantly, until it thickens to a creamy consistency. This step is crucial for achieving that silky, luxurious texture.  Once thickened, remove the saucepan from the heat and let the mixture cool down. Once the mixture has cooled, add the juice of 1 lemon and 100 g (3.5 oz) of condensed milk to the cooled custard base.

Use an electric mixer or whisk to beat the mixture until it becomes thick and creamy. The lemon juice adds a refreshing tang, while the condensed milk brings in a touch of sweetness, perfectly balancing the flavours. Pour the creamy lemon mixture into serving bowls or glass. Decorate the top with a sprinkle of cinnamon, a dusting of cocoa powder, or some grated chocolate—whatever you prefer.

This adds an extra layer of flavour and visual appeal to the dessert. Place the bowls in the refrigerator for 30 minutes to chill. This allows the flavours to meld together, and the dessert to set to the perfect creamy consistency.
