Braised Lamb Recipe
This lamb recipe is perfect for a special occasion if you want to make an impressive meal that everyone is going to love. Served it with mashed potatoes, rice or broccolini. You can use either boneless or lamb shanks with bone-in, begin by seasoning your lamb on both sides with salt and pepper. Add oil into your cast iron pot and once the oil is hot go ahead and add your lamb. Try not to overcrowd the pan, fry them for 3 to 4 minutes on each side until they develop that beautiful brown colour.
Meanwhile, roughly chop 1 onion, 2 potatoes, 2 carrots and 2 stalks of celery and once the lambs are nicely browned transfer them onto a pan or plate. Carefully add the veggies to the pot and season them with a little salt then cook them for about 8 to 10 minutes until they get a little bit of colour in them. Next, add 6 grated cloves of garlic and warm them in the pot for just a few seconds until fragrant.
Add 3 to 4 tablespoons of balsamic vinegar to break up the heaviness of the dish, one can of crushed tomatoes, 2 bay leaves, a teaspoon of cumin for warmth, and 2 springs of rosemary and red pepper flakes. Add the browned lambs and cover them with water, beef broth or chicken stock. There are 2 ways that you can cook them, first, you can cook them over medium heat for one hour or until cooked or cooked in the oven.
Preheat the oven top to 350F place the pot in the oven covered and cook for 2 hours. Once they come out of the oven, serve them straight away with any asides of your choice. This is a super delicious meal, so tender and soft. Enjoy…

- 500 grams of lamb shanks
- 1/4 cup olive oil
- 2 carrots
- 2 celery stalks
- 3-4 potatoes
- 1 onion
- 6 garlic cloves, grated
- 15-oz crushed tomatoes
- 3-4 tablespoons Balsamic vinegar
- 4-5 cups water or broth
- 1 and 1/2 teaspoon salt, or to taste
- freshly cracked black pepper, to taste
- 1 heaping teaspoon dried oregano
- 2 rosemary sprigs
- 1 teaspoon ground cumin
- 2 Bay leaves
- 2-4 tablespoons fresh lemon juice

- Preheat the oven to 350 °F, 180 °C. and cook for 2 hours.
