These delicious mini pancakes are the simplest pancakes you will ever make, they take five minutes and there is nothing as conforming and as satisfying than a bowl of these fluffy mini pancakes. For this recipe you will use your go-to pancakes recipe, in a large bowl you will need all the dry ingredients which include the sugar and give them a quick mix. If you want a shortcut you can use the pancake mix which is essentially the same thing, flour, sugar, leavening agents.

Set the dry ingredients aside and for the wet ingredients, you will need buttermilk into a jar then into that add melted butter and the egg then mix everything in. If you don’t have buttermilk you can make your homemade by adding milk and a quarter teaspoon of vinegar/lemon juice. Pour the wet ingredients over the dry and use a wire whisk combine everything together and don’t overmix the batter. Stop when all the dry ingredients are moistened and there are no lumps in the batter.

There are various ways you can make these mini pancakes, the easiest and fastest way is pouring the batter into a piping bag or a ziplock bag then cut the smallest opening possible to eat the tip. If you have a bigger opening you will have less control over the bag and the batter will just go everywhere. It’s best to use a nonstick pan if you don’t make sure you grease the pan very well then pipe your mini pancakes overt the pan and try to make them as evenly as possible so that they cook at the same time.

Your heat should be on medium and these mini pancakes will cook quickly because they are small about two minutes.  As soon as you flip them to cook them for about 15 seconds then remove from the pan, any longer and your pancakes may dry out and you don’t want dry pancakes.

These pancakes are best served warm and if you made many of them you can put the excess in a ziplock bag and they will freeze beautifully and then reheat another time. Serve them on a bowl with a good drizzle of maple syrup and butter. These are the best you will ever eat, nothing will beat the comfort of these mini pancakes. Enjoy.
