This special cookie recipe is super rich and buttery melts into your mouth and is perfect with a cup of coffee or tea. It is a pretty simple butter cookie recipe, except for the fact that it’s made with mayonnaise. The cookie batter comes together in no time, so start by preheating your oven to 325 degrees Fahrenheit.

Into a mixing bowl, add half a cup of unsalted butter that is softened to room temparature and half a cup of granulated sugar, then use a hand mixer to beat the sugar and butter together until really light and fluffy. Next, add half a cup of mayonnaise, one teaspoon of vanilla extract and one large egg. Give that a mix until the egg is well beaten, then set that aside for about a minute or two.

Move to the dry ingredients and mix into another bowl one and three-quarters cups of all-purpose flour and half a teaspoon of baking powder, then give that a quick mix and add the flour mixture to the cookie batter. Please mix until the flour is mixed and you have a smooth cookie batter with no visible flour. Line your baking sheet with silicone or parchment paper, add the cookie batter into a piping bag, pipe the batter onto the pan, and create any shape.

Bake them in a 325F preheated oven for about 14 minutes for more minor and 18 minutes for more giant cookies. You want them to be just golden on top and around the edges. Once baked, let them cool on a wire rack and serve them. You can also melt half a cup of chocolate, dip the cookies halfway in, and serve.
