This cake is a super light and fluffy cake that is cut in layers to make more delicious cakes such as Victoria cake or any layer cake. The first thing you need to do is line a 7-inch cake pan with parchment paper on the bottom and the sides. Put butter and milk in a small bowl and microwave them until the butter melts then in a separate bowl, sift the cake flour twice, this process is very important in order to have a fine texture cake and not to have lumps in the cake.

In a bowl of a stand mixer, add eggs and sugar the beat them just to combine then place over a double boiler and whisk the egg mixture until it becomes lukewarm and the sugar is dissolved. Set the bowl on the stand mixer and whip the egg mixture until very thick then add vanilla extract and whip it again.

It is very important to whip the eggs really well. Add the sifted flour in three additions and at this point, you will use a spatula to fold the flour in the batter so that you do not overmix. After all the flour is moistened in the batter, add the melted butter and milk mixture and fold in with the spatula.

Pour the batter into a prepared pan and bake in a preheated oven at 350 degrees Fahrenheit (180 degrees Celcius) for 20 to 25 minutes. Take the cake out of the oven and insert a toothpick in the centre if it comes out clean the cake is done, let the cake cool in the pan for about 15 minutes then invert it over a rack the slice and use the layers to make any shortcake that you want.

Ingredients;

  • 20 grams (1tbsp)  butter
  • 1 Tbsp milk
  • 90 g cake flour
  • 3 eggs
  • 90 g sugar
  • 1 tsp vanilla extract

Instructions;

  1. Preheat the oven to 350 F (180 C) at least 20 minutes before. Line a 7″ cake pan with parchment paper (bottom and side). Put butter and milk In a small bowl and microwave until the butter melts.
  2. In another bowl, sift the cake flour 2 times. Set aside.
  3. In a bowl of a stand mixer, add eggs and sugar. Over a double boiler (placing the bowl over a pot with simmering water on low heat), whisk the egg mixture until it becomes lukewarm (until the sugar dissolves).
  4. Set the bowl on the stand mixer, and whip the egg mixture until very thick, add vanilla and mix.
  5. Add sifted cake flour in 3 parts. Fold in the first one-third of the flour by hand with a spatula (not with the mixer).
  6. After the flour is incorporated, add the next part of the flour and again fold in with the spatula. Repeat. Next, add the mixture of melted butter and milk and fold in with the spatula.
  7. Put the batter in the prepared pan then bake for 20-25 minutes.
  8. Take the cake out of the oven and leave it for 15 minutes. Finally, remove the cake from the cake pan.
