Passion Fruit Pound Cake

This passion fruit pound cake is tangy and delicious and I am hoping you can try it out. In a large bowl, you want to add all-purpose flour and baking powder, baking soda, and salt. Give them a good whisk and set it aside. In a separate large bowl, you want to add softened unsalted butter and just beat that up until it is nice and pale and fluffy using a hand mixer.

And to the butter add sugar and again beat that in. Now you are going to be adding your eggs one at a time. (try to make sure your ingredients are at room temperature so that everything will mix well and evenly without curdling). Then you can add your next egg and vanilla extract and beat that in.

Now you are going to be adding half of your dry ingredients and mixing that through. Now you are going to be cutting your fresh passion fruits. You can strain the seeds too and then mix them up into your batter don’t forget to give your bowl a good mix so that everything is well combined.

Add in the rest of the dry ingredients along with milk and that is it for your passion fruit pound cake batter make sure everything is well mixed. Add your batter to a loaf pan that you have greased and lined with parchment paper and hold the sides with binder clips, fill up your pan and use the spatula to spread it out evenly, and don’t forget to remove the binder clips.

Now you can bake this at 325 degrees Fahrenheit or 160 degrees Celcius for about 40 to 50 minutes. In the meantime, prepare the passion fruit glaze. So get powdered sugar in a bowl and add in the passion fruit you can strain out the seeds if you like to but the look of it is up to you.

Just give it a good stir and you should see it coming together. So once the cake is completely cooled you want to remove the parchment paper and you wanna place it on a cooling rack over a baking sheet lined with parchment paper now you can make the glaze and just drizzle it all over the pound cake.

Now ideally you want to let it sit and let the glaze harden before you cut the cake. Serve this cake with tea and enjoy it.

  • 1 1/2 cups (180grams/ 6.3Oz)  all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (114 grams/ 4Oz) softened unsalted butter
  • 1 cup (200grams/ 7Oz) of sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3 Tbsp passion fruit
  • 6 tbsp milk
