Mini Lemon Cakes

Making mini lemon cakes is a fun and delicious way to enjoy a light, zesty dessert that everyone will love. These small cakes are perfect for parties, after-school treats, or whenever you want something sweet but not too heavy. Before you start, make sure you have everything you need. You will need a muffin or cupcake tin, mixing bowls, a whisk, and measuring cups.

Preheat your oven to 350°F (175°C), and lightly grease the muffin tin with butter or non-stick spray. This will prevent the cakes from sticking to the pan. In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt. Whisking helps to mix everything evenly and makes the cakes light and fluffy. In another larger bowl, use a hand mixer or a whisk to beat the softened butter and sugar together until the mixture looks light and fluffy.

This step takes about 2-3 minutes. It’s important because it makes the cakes soft. Crack two eggs into the butter-sugar mixture one at a time. Beat well after adding each egg. Then, stir in the lemon zest and vanilla extract. The lemon zest gives the cakes a fresh, tangy flavour. Next, slowly pour the dry ingredients into the butter mixture, adding it in small amounts while mixing.

Add the lemon juice and milk a little at a time, mixing in between each addition. Keep stirring until everything is well combined and smooth. Spoon the batter evenly into the greased muffin tin, filling each cup about ¾ full. Place the tin in the preheated oven and bake for 15-20 minutes, or until the tops of the cakes are golden and a toothpick inserted into the centre comes out clean.

When the cakes are done, carefully take the muffin tin out of the oven using oven mitts. Let the cakes cool in the tin for about 10 minutes, then gently remove them and place them on a wire rack to cool completely. Once the cakes are cool, you can dust them with powdered sugar for a simple decoration, or drizzle a bit of lemon glaze if you want extra sweetness.

  • 1 teaspoon baking powder

  • ½ cup (113 grams/ 4 oz) unsalted butter, softened
  • ¾ cup (150 grams/ 5.3 oz) granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon zest (grated lemon peel)
  • ¼ cup fresh lemon juice
  • ½ cup (125ml) milk
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)
