Mini Lemon Cakes
Making mini lemon cakes is a fun and delicious way to enjoy a light, zesty dessert that everyone will love. Preheat your oven to 350°F (175°C), and lightly grease the muffin tin with butter or non-stick spray. This will prevent the cakes from sticking to the pan. In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt. Whisking helps to mix everything evenly and makes the cakes light and fluffy. In another larger bowl, use a hand mixer or a whisk to beat the softened butter and sugar together until the mixture looks light and fluffy.

Place the tin in the preheated oven and bake for 15-20 minutes, or until the tops of the cakes are golden and a toothpick inserted into the centre comes out clean.
When the cakes are done, carefully take the muffin tin out of the oven using oven mitts. Let the cakes cool in the tin for about 10 minutes, then gently remove them and place them on a wire rack to cool completely. Once the cakes are cool, you can dust them with powdered sugar for a simple decoration, or drizzle a bit of lemon glaze if you want extra sweetness.
