This Greek recipe is served as a dessert as well as a snack and the name of this beautiful recipe is Loukoumades, so easy to make and very delicious. These yeast-risen dough balls are deep-fried to a golden brown and then soaked in simple sugar syrup. To make the batter, add all-purpose flour into a bowl then add cornflour, instant yeast, sugar, salt and then mix the dry ingredients well.

Add lukewarm water into the dry ingredients and mix until you achieve a semi-thick consistency. Cover with a plastic wrap and let it rest for at least two hours or until it doubles in size. Meanwhile, make the sugar syrup by adding sugar into a saucepan then add water and turn the heat to medium while stirring until the sugar is completely dissolved. Add in some lime juice to avoid crystalization and mix it in then bring it to a boil for five to ten minutes or until the sugar syrup becomes sticky.

Remove from the heat and set it aside. Heat some oil in a pan and take a small portion of the dough with your hands and carefully drop into the hot oil. Your batter consistency should be not loose nor thick and the moment the batter touches the oil it will get puffed up and form the ball shape. While these balls are frying, you have to continuously mix them to make sure all sides are browned.

Also, do not overcrowd your pan, you can add four to five drops at a time depending on the size of your frying pan. Initially, when you are frying the balls and they don’t get puffed up, it means your batter is loose and you have to add more flour to the batter to make it thicker. After frying, drop the doughnut balls into the sugar syrup and mix it for two to three seconds then serve it.

You can also place the doughnuts balls into a bowl then drizzle the sugar syrup over them then serve it. Instead of sugar syrup, you can also use melted chocolate. These balls have a very crispy texture on the outside with a very soft inside.
