This is an easy nutritious and delicious way to eat ice cream guilt-free and if you love avocadoes that much it is a no-brainer. Avocadoes contain vitamins and mineral and they are not only healthy they are really versatile you can swap out avocadoes for butter or shortening and many baking recipes plus they are good sources of good or unsaturated fats making them a tasty way to be healthy but still get turns of flavor. So we are going to start by taking a can of coconut milk and put it in a fridge overnight and it creates less work for you.

So use the spoon take out all the solid coconut and what you are left with is the liquid that you can use to make otter pops or Popsicle with. So now just whip the solid coconut on medium to high speed until it is the consistency of whipped cream and set it aside. Next, make your avocado cream using 1 and ½ avocado. Slice the avocado in half using a knife and peel back the skin and pop it into the food processor so slice the avocado one way turn it the other way and create 4s and a lot of people sometimes injure themselves trying to get that pit of.

Then add a little bit of lemon for acidity that helps the avocado from oxidizing and turning brown when we freeze it. Turn it on to get a silky smooth puree and be sure to scrape the sides until you get the entire avocado nice and smooth. Take the avocado cream and carefully fold it into your coconut cream using a rubber spatula. This ice cream is really good for all those vegans out there.

Then add organic brown rice syrup it is a great syrup that is low in fructose never used before really awesome. Fold it in really gently and get it all incorporated and that is it. Transfer it into your freezer-safe container and put it in the freezer for at least 4 hours but before you do that cover it with a plastic wrap to prevent ice from forming on top of the ice cream which we do not want.

After 4 hours take it out of the freezer and using an ice-cream scoop or spoon serve and enjoy. It should be creamy and silky and you should get the flavor of the avocado within the sweetness from the coconut plus it is a great recipe to give the kids. It is a fun way to introduce healthy smooth snacks into their diets.
