To make the very best marmalade cake, you need the very best marmalade but if you don’t have marmalade, you can make yours at home. You will need a pan over medium heat and add in some orange juice sugar and grate in the orange zest, be careful not to grate the white part because it is bitter and you need it on your cake. Using a spatula mix everything together and let it simmer for 15 minutes stirring periodically so it doesn’t burn and you will end up with this thick orange marmalade with intense citrus flavour. You do not need any artificial flavour or orange extracts to flavour the cake because it does a perfect job set it aside to cool and mix the dry ingredients in a bowl add in some flour add in baking powder add salt get your whisk and whisk that all that together very well and set aside.
Next, mix in your wet ingredients in a bowl add in half cup of the orange marmalade that you just made also add in butter and some sugar using a hand mixer mix it together until fluffy and make sure you do not over mix. Add in some eggs one at a time make sure the first egg is well incorporated before adding the next one then add in an egg yolk to get the cake extra moist to go ahead and get that mixed in and add in some vanilla extract and zest of a whole orange whisk everything together taking care not to over mix.
Scrape your bowl down the sides of the bowl to make sure everything is getting mixed in well. Next, add in some milk and gradually add in your dry ingredients which are your flour mixture and mix it in using a hand mixer and take care not to over mix. like always scrape down the sides of the bowl and make sure everything is well mixed in and add in the last of your flour mixture and get it to mix it in and finish mixing it in with a spatula and you are ready to bake.
Get three 6 inch baking pans or one large baking pan that is lined with parchment paper so it does not stick and equally pour in your batter into them and spread the tops evenly using a spatula. Bake them into a preheated oven of about 350F for about 25 to 30 minutes so while the cakes are baking make an orange cream cheese frosting. Put the bowl in cream cheese in a bowl make sure it is very cold and gradually mix it together with some powdered sugar when it is fluffy add in some softened butter and orange zest.
The option is to use an orange food colour and mix well in and by this time the cakes should have been baked and let them cool completely before frosting. Level the top with a serrated knife that way they are stable when frosting. Spread the marmalade before frosting which is optional the marmalade has a strong citrus a flavour so dilute fist with water before adding just a thin layer to the first and second layer cake. Then cut a slice and place it on a plate and enjoy.
